Bear Frittata

This is a breakfast recipe, but with a salad it would make a nice dinner. I add spice to my liking, so go ahead, play with this recipe and make it your own specialty.

Instructions
Heat oven to 400°F. Beat eggs, dressing, and milk with a whisk in a 2-litre casserole dish until blended. Stir in hash browns, vegetables, and cooked sausage, salt, pepper, and nutmeg. Flatten in dish, then top with shredded cheese. Bake for 35- to 40 minutes or until centre is set. Serves six.

Ingredients
 

  • 4 eggs, beaten lightly
  • 1/2 cup mayonnaise
  • 1/2cup milk
  • 2 cups frozen hash browns (stringy ones, not cubed)
  • 2 cups broccoli florets
  • 1 medium onion, chopped
  • 1 medium red pepper, chopped
  • 1 cup cooked bear sausage (remove the casing before you cook the sausage to get smaller pieces)
  • 1 tsp. salt
  • 1/2 tsp. ground pepper
  • 1/2 tsp. ground nutmeg
  • 1 cup shredded cheese (try old cheddar)
